Hello,
To sign-out from Gmail account you need to keep in mind that you can’t individually sign out from Gmail. Once you sign-out you’ll be automatically get signed out from all other services like Gmail, YouTube, Drive etc.
But, here is again a catch. Suppose you are using the same phone from which you need to sign out then this is not possible. You need to use some other device. Preferably a PC. In other words, you can’t sign out from the same device you are logged in. Follow along with me:
