No, There wont be any notification sent to other person, when you unsend a message on Instagram chat, and you need to remember this, before you ask will the other person know if i unsend a message on Instagram.
If you unsend right while conversation is going on, other person will observe that there is a text missing (so he/she gets to know).
Let us see a example : For example if you scroll a lot of messages up and delete a old text from your Instagram conversation with that person, then there are less chances of other person knowing, that you unsend a message.
until and unless he/she scrolls up and read all the conversation and finds there is something missing, other person won’t knows when you unsend a text.
But if you unsend a very recent message while chatting is going on, for sure other person will get to know, that you deleted a text.
