Gmail, YT and other services are all managed by Google accounts so if you change/remove your picture here, it won’t show up elsewhere.

I will show you a easy way to remove gmail profile picture completely. There wont be any profile picture, just a starting letter of your name. Open your gmail app and click on profile picture image. So that you will see manage your account option, click on that. Observe in the below image.
Once you click on manage your account, you will see options like Home,personal Info, data and personalisation etc. So click on Personal Info and scroll down and click on “Go to About me” Option, As shown in the below image.
Once you click on about me, just scroll down and you will see a link “Manage your profile Picture”. Click on that, there you will see remove photo option. Observe the image below.
