Yes you can keep WhatsApp privacy setting to exclude one person from viewing your WhatsApp status. Click on WhatsApp status, then click on 3 dots then on status privacy option.
See when you click on privacy WhatsApp settings then you will see an option called my contacts except. Click on the radio button and select the person you don’t want to share your WhatsApp status.
