If you want to exit or leave beta program in Google Play Store, just you need to open Play Store and click on profile picture at right top corner. Here your find settings option tap on it.
Once you click on settings, you need to click on accounts and device preferences option.
Once you open accounts and device preferences, here you will find an option call leave beta program, so click on and exit from beta program option.
As you observe in the above image you can find an option called leave beta program.
